My version of KIND bars…

So yesterday, I got the bright idea, I’m going to make my own version of KIND bars. I love the coconut & almond so… I decided I’d put together my own. I’m starting to prep for Ironman training and I have a feeling there will be times I just need to grab a little something. Of course I’m planning on eating cleaner with less processed foods and attempting to add more fruit in my diet (I wish the juicer lived with me instead of Dustin, who’s now in New Jersey) – which is always a struggle because I HATE FRUIT…. it’s a texture thing. Anyways, back to my natural energy bars…

Here’s what I used:
Dry Ingredients:
Steel Cut Oats
Non-sweetened Coconut – if you can find get a coconut and shave it
Sliced Almonds

Wet Ingredients:
Almond Butter

I’m one who goes from feel of the ingredients, so don’t be afraid to play around a little bit. I’m already thinking about adding raisins next time!

Basically I took about 2-3 cups of unsweetened coconut, 1 cup of steel cut oats, and about 1/2 cup of Sliced almonds & mixed those together.

Then in a separate bowl, I mixed a about 2 tbsp of almond butter with about 1/2 cup of honey. Because the honey is so sweet, you will want to make sure your other ingredients are not unless you have a true sweet tooth! 🙂 I mixed the wet ingredients into the dry – you can do this with your hands or with a spoon – I did a little of both.

I then pulled out the plastic wrap and molded the mixture into a ‘bar’ and then placed them in the freezer. I sized mine to be different sizes because depending on the day or training session, I may want a normal size versus a mini sized. They set pretty quick, I’m using the freezer to help make them hold a little better.
